Garlic Soup

Recipe makes two bowls of soup; I recommend making a big batch and freezing the excess. As long as the garlic is cooked thoroughly you should not stink, but YMMV. Seasoning measurements are approximate, season to your taste.

Ingredients

  • 15 cloves (about 1.5 bulbs) garlic
  • 1/2 medium onion, chopped
  • 3 tbsp butter
  • 1.5 tbsp flour
  • 3 cups water + bouillon cube, or broth
  • 1 tsp thyme
  • 1 tsp crushed red pepper flakes
  • 1 bay leaf

Instructions

  1. Smash and peel the garlic about 10-15 minutes before cooking to allow the allicin to develop, then cook with onion until soft in 2 tbsp of butter.
  2. Make a roux with the flour and remaining 1 tbsp of butter, and combine with cooked onion and garlic.
  3. Dissolve a bouillon cube in water if not using broth, and add liquid to the mixture. Add seasonings and simmer for at least 15 minutes, until slightly thickened.
  4. Blend the soup before serving.
