Egg Noodles
Recipe is adapted from this one. Makes more than enough for two adults; try halving the recipe if you're solo or not very hungry.
Pair with my garlic soup recipe!
Ingredients
- 2 1/2 cups flour
- 2 eggs
- 1/2 cup milk or water
- 1 tbsp butter, melted
Instructions
- Beat the eggs and add to flour with the milk/water and melted butter. Mix until combined; if too wet to knead, add more flour.
- Knead the dough for about 5 minutes and form into a ball; cover and let rest for about 10 minutes.
- Boil enough water for the noodles to be submerged. While you're waiting for the water to boil, roll out your dough until it's about 1/8-1/4 inch thick. Noodles will expand when boiled, so you may want to go a little thinner than your instinct.
- Cut the flattened dough into strips and place into boiling water immediately. I do not recommend leaving the cut pasta to rest. Boil for about 5 minutes. Excess cooked pasta will survive all right in the fridge.
