Egg Noodles

Recipe is adapted from this one. Makes more than enough for two adults; try halving the recipe if you're solo or not very hungry.

Ingredients

  • 2 1/2 cups flour
  • 2 eggs
  • 1/2 cup milk or water
  • 1 tbsp butter, melted

Instructions

  1. Beat the eggs and add to flour with the milk/water and melted butter. Mix until combined; if too wet to knead, add more flour.
  2. Knead the dough for about 5 minutes and form into a ball; cover and let rest for about 10 minutes.
  3. Boil enough water for the noodles to be submerged. While you're waiting for the water to boil, roll out your dough until it's about 1/8-1/4 inch thick. Noodles will expand when boiled, so you may want to go a little thinner than your instinct.
  4. Cut the flattened dough into strips and place into boiling water immediately. I do not recommend leaving the cut pasta to rest. Boil for about 5 minutes. Excess cooked pasta will survive all right in the fridge.
