Savory Corn Pudding

While this dish does contain sugar, it is not dessert. More like a casserole, I've elevated this Southern side dish to main course status with additional vegetables and cheese. Add cooked meat such as steak pieces or ground beef for an even more well-rounded dinner.

Feel free to try different combinations of vegetables and seasonings! I like to serve with ketchup.



Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 4 tbsp butter, melted
  • 2 cups corn kernels
  • 1 1/2 cups green peas
  • approx 3 small jalapenos, diced
  • 1/2 medium red onion, diced
  • 1/2 cup flour
  • 1/3 cup cornmeal
  • 2 tsp baking powder
  • approx 1 tsp red pepper flakes
  • approx 1 tsp oregano
  • approx 4 oz extra sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350° F and grease a cast iron pan or casserole dish.
  2. Beat the 4 eggs in a big bowl, then combine with sugar, sour cream, and melted butter.
  3. Add in the dry ingredients (flour, cornmeal, baking powder, and seasonings.)
  4. Fold in the vegetables, then add the mixture to the pan and bake for about 30 minutes.
  5. Remove from the oven and top with shredded cheese, then finish cooking for about 10 minutes. The top should be lightly browned and it should be mostly set throughout, but it can be a little wet in the center.
  6. Once the cheese is melted and lightly crisp around the edges, remove from oven again and allow to cool for a few minutes before serving. Slice into wedges or squares, depending on your pan.
